This is a dish that an ex pat living in Marrakesh introduced to me some years ago, although it would not depend on the stock of a boiled Ham Joint, because Maroc is a predominately Muslim Country. I am sure that a veg stock cube or similar could be substituted, for the Ham Joint Stock.
I think it is the Freshly Ground Cumin Seeds that gives it the distinct North African Aroma and flavour too.
Even though the recording or the recipe was not intentionally comic, you may enjoy it.
Next will be Soda Bread, and Irish Barm Brack, which is a Rich Fruit Tea Bread, traditionally eaten at Halloween, and normally contains a miniature silver ring, which can be taken to mean an impending wedding, for the lucky finder! ….if not already wed.
